Chickpea Artichoke Rice Bowls

Chickpea artichoke rice bowls are something I recently came up with when I was looking for an easy, lighter dinner. This recipe is pretty toddler friendly, Vivi loved helping stir everything together (and tasting it several times)!

This is one of the vegetarian meals that we have on occasion. We try to have about one meal a week that’s vegetarian to save a bit of money, since beans are much cheaper than a lot of meat! Vivi loves beans, which is another bonus with this meal.

Ingredients:

  • 1 can chickpeas
  • 1/2 can artichokes
  • 1/2 can corn
  • 1/4 red onion, chopped
  • 1 cup rice
  • 1/2 cup Monterey jack cheese, shredded
  • 1 1/2 tsp. olive oil
  • 3/8 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1/4 tsp. salt (or more to taste)
  • 1/4 tsp. pepper

Directions:

Preheat oven to 400 degrees.

Drain and rinse chickpeas. In a bowl mix chickpeas with olive oil, garlic powder, chili powder, paprika, salt, and pepper. Line a baking sheet with parchment paper and spread chickpeas and onion in a thin layer. Bake for 15-20 minutes.

Rinse and cook 1 cup of your rice of choice. Typically I use long grain rice.

Chop artichokes into bite sized pieces.

Combine rice, chickpeas, onion, corn, and artichokes. Add cheese and any additional seasonings to taste. Makes 3-4 servings.

Notes:

  1. If you don’t have other ways to use half cans of corn or artichokes, I’d recommend just doubling the recipe. I personally like to use the rest of the artichokes for pizza. I’ll post the recipe for that soon!
  2. I typically don’t measure my spices, I’m a dump and taste kind of girl😂. The seasonings are approximations, so feel free to adjust to your taste preference.
  3. You don’t have to roast the onion or the chickpeas. I like the texture of the chickpeas roasted better than not. The onion can overwhelm the whole dish when it’s not roasted, and I don’t like tasting onion for the rest of the day 😂
  4. You could also add some chicken to add some more protein.
  5. We also like to add sriracha to spice things up some of the time!
